Summer Squash Tian

Ingredients

4 tomatoes
2 small onions
1 zucchini
1 yellow squash
1 medium sweet potato
1 Tbsp. olive oil
Sea salt + pepper to taste

Cooking Instructions

Grease a 9 inch round baking dish with olive oil and preheat the oven to 400 degrees F.
Slice the tomatoes, onion, summer squash and sweet potato into ⅛ inch slices so they are all around the same size, as they will be layered next to each other. A mandolin would be really helpful here.
Start layering the sliced veggies into a circular pattern, layered on top of each other, alternating colors/types of veggie (see photo).
Drizzle over 1 Tbsp. of olive oil and sprinkle salt and pepper, and do your best to evenly distribute
Place in the oven and bake for about 50 minutes to an hour, until vegetables are tender. Allow to cool and serve this as a side dish to a protein at your meal!
