The oil is a light fruity type, with a golden color. Aromas of oregano, rosemary, artichoke, chicory, yellow pepper, green olive, yellow-fleshed fruit, and almond complete the olfactory profile. On the palate, it is quite structured, spicy, and has a slightly bitter tone that gently emerges and accompanies the flavor until the end. The persistance is long-lasting.
Ideal pairing with warm dishes, such as fava bean puree or baked gratin vegetables.
